Tex-Mex Breakfast Burrito
    1 tbs oil
    1 large potato, diced
    1 small onion, diced
    1 lb Chorizo
    12 eggs
    12 10" flour tortillas
    1 cup shredded cheese
    Sliced jalapenos (optional)
Heat oil in skillet, then add potatoes, onions and chorizo, cook until potatoes are browned. Add eggs and continue to cook stirring often until eggs are completely cooked. Put mixture on warmed tortillas and top with cheese and salsa.
