Chicken Cacciatore
    3 lb Frying chicken, cut up (I like to use 1 hind quarter per person)
    3 tbs oil
    2 medium onions, sliced
    1 small green pepper, sliced
    3 cloves garlic, minced
    1 8 oz can tomato sauce
    1 tsp salt
    1 tsp oregano
    tsp basil
    tsp black pepper
    tsp celery salt
    1 bay leaf
Heat Dutch oven, brown the chicken in the oil. Remove chicken from Dutch oven. Layer the onions in the bottom of the oven. Put the chicken on top of the onions then layer the green pepper and remaining ingredients. Cover and cook at 350 degrees for 1 - 2 hours. Serve over buttered pasta.
